Sweet potato cubes

INGREDIENTS

2 large sweet potatoes, cubed

1 red bell pepper, cubed

1 zucchini, diced

1 red onion, chopped

1/2 teaspoon garlic powder

1 teaspoon of smoked or regular paprika

1 teaspoon of salt

2 tablespoons of avocado oil

INSTRUCTIONS

Cut your vegetables.

Mix all ingredients in a bowl and bake at 375°F for 25 to 30 minutes, stirring once, until sweet potatoes are fork tender.
