INGREDIENTS

1 1/2 cups soaked almonds

1 cup of hot water

⅓ cup lemon juice

1 small clove of garlic

1 teaspoon of salt

1 tablespoon of olive oil

INSTRUCTIONS

Soak the almonds in cold water overnight or up to 24 hours.

Drain the almonds and rinse them.

Put all ingredients in a blender and blend until smooth.

INGREDIENTS

½ cup soy milk

2 tablespoons of lemon juice

½ teaspoon of salt, black salt and sugar

1/4 teaspoon garlic powder and 1/8 teaspoon onion powder

1 cup avocado oil

INSTRUCTIONS

Add all ingredients except the avocado oil to your immersion blender bowl. Mix with a spoon, then add the oil and let it sit for 1 minute. Place the immersion blender at the bottom of the bowl, hold it in place, and blend on high for 15 seconds, then swirl the blender up and down until frothy.

Alternative to the blender

Mix the soy milk, vinegar (or lemon juice) and salt, then let the appliance run while pouring the oil very slowly in a thin stream so that the emulsion forms, until you obtain a smooth and creamy texture.
